This skimmer, also known as a ‘skimming cap’ was used for skimming the cream from the surface of the set milk. It would also have been used for stirring and slicing the curd, and for skimming the curd off the whey. The skimmer is made of sycamore, and is a plain, round, dish with no handle. The donor found it in a ‘Gornall Patent Cheese Maker’ (60/32) at Plankton Farm in Hambleton, Lancashire.
