<DIV STYLE="text-align:Justify;font-family:Georgia;font-style:normal;font-weight:normal;font-size:16;color:#000000;"><P><SPAN><SPAN>2. <B>Carcass-scraper</B><P> It was quite common in the nineteenth century for ordinary country people to keep a pig in a special enclosure in the back garden. It would be fed on household scraps and waste garden produce. When the time came to kill the pig, a local man skilled in the business would be brought in to do it. Part of the process involved scalding the dead carcass with hot water and then using a tool like this to scrape off the hairs. Often an itinerant pig-killer was employed, who killed and cut up the pig. When it was dead, straw was heaped about the body and ignited to burn off the long hairs, then the carcass was placed on the hog-stool, scalded and scraped to remove any remaining hairs. It was then hung up and the entrails were removed, and then every part of the pig was used for something, lard, sausages, brawn, ham, etc'
